In response to my entry on culinary courses at the C.I.A., I was asked if I had any information concerning courses given by the CIA campus in Manhattan. I’ve looked at the C.I.A’s new brochure “Taste” and I don’t see a reference to that location.
However, I’ve enjoyed taking courses at two other cooking schools in Manhattan:
1) De Gustibus– Located on the 8th floor of Macy’s Herald Square, De Gustibus doesn’t offer hands-on courses, but you can enjoy watching terrific demonstrations and eating the resulting dishes created by world-class chefs. I learned a lot of great tips from David Chang of Momofuko Noodle Bar.

I also like the location because it’s so close to Penn Station. When I’m finished, I can run right over to the station and jump on the train to go home.
2) The French Culinary Institute– This school is located at 462 Broadway, and it offers both hands-on and demonstration courses. I took a great hands-on pastry course that was given by Victoria Love of the Water Club. I also spent a day watching world class pastry chefs demonstrate how to make beautiful cakes with different types of molds.
I would also recommend watching for other last minute courses advertised in the Wednesday Dining section of the New York Times.
