I’ve mentioned before that I had been invited last month on a press trip to Aruba, a beautiful Dutch Island in the southern Caribbean Sea.
After getting settled in, I met up with Diamond PR rep. Lisa Schwartz, the Aruba Marriott’s manager, Keirsin Tjon Pian Gi, and the other invited journalists to attend a lovely dinner on the beach at the resort’s Simply Fish.

We dined on delicious dishes such as an Arubian Triangle, a combination of grilled lobster tail, swordfish and grouper in a red curry and coconut sauce.
While there, we learned that Aruban food can be a fusion of African, Spanish, French, Dutch, Indian, and Chinese cuisine. Some of the most common ingredients in meals include beef, chicken, rice and fish. A favorite snack is known as pastechi, a sort of turnover that’s been filled with beef or cheese.
Great time, but I also loved the next night’s visit to Screaming Eagle with its French-Fusion cuisine. As we dined on lounge beds, we were served a mixture of wonderful appetizers including a liver pate creme brulee.

Both of these restaurants had their own unique qualities, but I really enjoyed having breakfast the next day at Linda’s Dutch Pancakes and Pizzas.
Thicker than a crepe, but thinner than a normal American pancake, they could be filled with a wide variety of ingredients. Here’s what I chose:

The left half consisted of apples and honey while the right half was a mixture of bacon and melted cheese. Wow was this so great!!
